A1 vs A2 Ghee: What the Letters Actually Mean
If your ghee jar doesn't say A2, it's almost certainly A1. Most people have no idea there's a difference, the letters refer to the type of beta-casein protein in the milk the ghee was made from.
A1 milk comes from high-yield crossbred cows called Holstein Friesian, Jersey, the breeds that power industrial dairy.
A2 milk comes from indigenous Indian breeds: Gir, Sahiwal, Tharparkar, Red Sindhi. For thousands of years, all Indian dairy was A2. The switch happened quietly, as crossbreeding for volume replaced native herds.
Why does it matter?
A1 milk contains a protein fragment called BCM-7, released during digestion. Many people report that dairy from indigenous breeds feels lighter and easier on the stomach, the heaviness they associate with milk simply isn't there. The taste difference is real too. A2 ghee from Gir cows has a deeper golden colour and a nuttier, more aromatic profile closer to what your grandmother's kitchen smelled like, because her ghee was A2.
How to check what you're buying:
The breed should be named on the label. "Cow ghee" alone tells you nothing. Look for "Gir," "Sahiwal," or an explicit A2 claim and be wary of A2 ghee priced like regular ghee. Gir cows give a fraction of a crossbred's yield; genuine A2 costs more to produce, always.
